At breakfast...with calendula...

Today I'm having a different breakfast ... I'm having marigold pancakes washed down with green tea ... bergamot sencha.

I'm not going to go into what the health properties of calendula are ... no ... by now we all have the ability to inform ourselves in an instant ...

Marigold, for those who are not familiar with it, is a small plant, more or less 15 to 20 centimeters tall, has lovely orange flowers and delicate, deep green leaves from which it exudes a sour, penetrating odor...it grows everywhere...in uncultivated fields...at the edges of vegetable gardens and even on the side of country lanes.

I'm not even going to talk about recipes it's not a recipe column...because a batter, we all know how to make it...all you need is a little flour, sugar, grated peel of an untreated lemon, sparkling mineral water or milk or neither...a pinch of baking powder and voila the batter is done.

When we pick marigold blooms ,we take them with stem and leaves and don't even need to wash them ... nothing is cleaner than a field ... where tiny insects and microorganisms are always in action to do painstaking and continuous cleaning.

So...we shake them enough to get rid of straws and ants, cut them into a couple of pieces, and throw them into the batter.

With a soup spoon, we take the flowers and leaves

“ kneaded” and we immerse them in a delicate peanut oil set to heat, remembering that the times are short ... seed oils, in fact, quickly come to temperature .

We then pull them up and lay them on a paper towel,then sprinkle them with a very light layer of powdered sugar.

I watch the whole thing smoking on a cold February morning....

The marigold flower pancakes are beautiful to look at and good to eat and ... with the tea releasing bergamot-scented molecules,I feel life enveloping me as soon as I first wake up ... a dream for anyone who wants to try...
